So you have enjoyed a meal featuring London Broil done on the grill.Inevitably there will be some London Broil left over. So what do you do with it?
Here's a suggestion:
Stir Fry Beef and Vegetables.
Ingredients:
Leftover London Broil
Seasoned salt
1 Yellow onion
3 Sticks of Celery, cut lengthwise then into 2 inch pieces.
5 Medium sized carrots, peeled and julienned
10 - 12 Asparagus tips
1 Red pepper cut into one inch pieces
1 cup Green Beans
Any other lurking leftover vegetables e.g. Broccoli, Cauliflower
Stir-fry sauce(you can either buy this or have a go at making your own - see below)
Rice noodles
Salt and pepper
Toasted sesame oil
Canola oil
Method:
Cut up the London Broil into thin strips about 1 to 1� inches long.
Heat one tablespoon of Canola oil in a large skillet. When oil is really hot(not quite smoking) add the beef strips and sprinkle them with seasoned salt. Stir constantly and remove them from the heat after about a minute and set aside.
In a large wok heat a tablespoon of Sesame oil and then add the onions and cook them until they just begin to soften.
While you are doing this cook the rice noodles according to the instructions on the packet.
Back to the wok. Add the celery, carrots, peppers and green beans and continue to cook for a further 3 minutes stirring regularly. Then add all the remaining vegetables stirring constantly for a further couple of minutes.
Now add the stir-fry sauce and continue to stir.
Finally add the cooked rice noodles and again stir all the contents of the wok together. This would be a good time to taste and add salt and pepper if necessary.
Next make sure the meat is hot. Re-heat if necessary.
Serve the contents of the wok onto warm plates and then add the beef to the top of this.
Notes:
A mixture of raw and cooked vegetables seems to work OK.
Try this "home made" stir-fry sauce:
Mix together equal parts of Duck Sauce, Roasted Raspberry Chipotle Sauce and Beef Stock. Then add hot sauce and soy sauce to your taste.
You can use the basis of this recipe for most meat leftovers. Chicken, pork or lamb will work equally well. Also the variety of vegetables can be endless. Go for rice noodles rather than pasta as they blend into the stir-fry rather better
This dish is a lot of fun since you really can't mess it up and you can modify it in as many ways as you like.
