Simple Ice Cream Cake:
Ingredients:
1 cup heavy cream
2 tablespoons confectioners’ sugar
6 ice cream sandwiches
½ cup chocolate chips
Method:
Let’s get started:
1. Line a parchment paper in a loaf pan allowing the paper to hang over both long sides.
2. Take a large bowl, add heavy cream and sugar. Beat the mixture until stiff peaks are formed.
3. Slice the ice cream sandwiches as per the size of a loaf pan and arrange three layers of ice cream sandwiches in the loaf pan.
4. Spread half of the whipped cream over the ice cream slices.
5. Repeat the process with whipped cream and ice cream sandwiches.
6. Sprinkle chocolate chips on the top of the cake. Cover the pan with a plastic wrap and freeze until firm.
7. Lift the cake out of the pan by holding the sides of the hanging parchment paper. Transfer the cake on a plate. So here’s one of the most delicious recipes of cakes.
Berry Ice Cream Cake:
Ingredients:
For the cake filling:
Basic chocolate cake baked and cooled
3 cups strawberry ice cream, softened
For the topping:
2 ½ cups raspberries
¼ cup sugar
¾ cup cold heavy cream
I teaspoon vanilla extract
Method:
1. Assemble the cake in a loose tin mould properly. Scoop the ice cream on the cake and spread it over the cake using a spatula.
2. Top the ice cream with another layer of cake and press it gently. Freeze the cake for minimum 4 hours or until firm.
3. For the topping, remove the cake from the freezer at least 30 minutes before serving. Let the cake stand at room temperature.
4. Toss the berries and sugar in a bowl and set aside.
5. Beat the heavy cream, 1 tablespoon sugar and the vanilla extract in a bowl in a mixer on a medium speed until peaks form for 1 or 2 minutes.
6. Spread the whipped cream on the top of the cake. Garnish with berries.
