Got a call from one of my girlfriends. Coming over from Punggol for our weekly girlfriends meet. Totally forgot that it was my turn to cook. I have not had lunch yet, so perhaps I would cook something that only needs 15 minutes of my time preparing, cooking and washing up after.
There are many simple dishes that I can think of and right now, I am going to write one that is the easiest to do for the busy moms out there. I called it the swimming fried eggs (I know it sounds icky, but hey! as long as the food taste nice, I don't mind the name). However, this dish is not meant for the health conscious.
Let's see the main ingredients that you need. Before you do this, you may want to cook some rice first. Usually, I would recommend having this dish with white / brown rice.
1. 3 eggs (depends on the number of kids you have to feed)- fried sunny side up. Do not break the yolk.
2. Olive oil or vegetable oil.
3. 1 medium-sized red onion, sliced,
4. 1 medium- sized Japanese onion, sliced (for the crunchy taste)- note, you can replace this with capsicum, diced.
5. 5 chillies, sliced. You can lessen the number of chillies if you or your guests cannot withstand spicy.. Cut them into pieces.
6. Button mushrooms (or shitake mushrooms, washed and cut)
7. 8 cups of sweet soy- sauce.
8.1 teaspoon of fish sauce.
9. Salt and pepper for taste.
The method
1. Fry the eggs sunny side up. Drain the excess oil away.
2. In a cooking pot, heat up about 3 tablespoon of olive oil.
3. Fry the red onion and the Japanese onion together. If you are doing this with capsicum, do not add in the capsicum first. Just fry the red onion first.
4. Add the 8 cups of sweet sauce in the cooking pot. Wait for it to boil.
5. Add in the capsicum, chillies and fish sauce.
6. Add in the button mushroom. Let it cook first.
7. Add in the fried eggs in the cooking pot.
8. Switch off the stove and voila!you have one simple yet fulfilling dish.
9. Scoop up some rice and serve the dish hot.

Usually, I cooked this dish when I have less than an hour to spare and when I was feeling hungry. This dish came as an accident while I was experimenting with eggs. My friends loved having this dish and they would ask me to prepare this dish whenever they come for a visit.
