The Best Monterey Cheese Steak Recipe

Monterey Cheese Steak-Steak Recipes In The Oven

Here at Steak Recipes In The Oven I will show you how to make the best Monterey Cheese Steak... This cheese steak like the Philadelphia version, follows the guideline principle of all serious guy cooking: Any food worth eating is better with melted cheese.(Think nachos, cheeseburgers,chili, cheese dogs and cheese fries). Use the best plain cheddar that you can get or try a good pepper cheese. On the East coast I like Cabot's Habanero Cheddar, which is east to find and melts nicely.

On The Side

As a side, freshly made beef chips are pretty special.They're sweeter than potato chips and easily to get perfectly crunchy. I make them when the weather has turned cool, using baseball size fall beets. The kohlrabi Salad provides a dose of raw vegetables made delicious by feta, olive oil, and cracker bread.

Ingredients

1 Large Porterhouse about (2 pounds)

1 1/2 Teaspoons red pepper flakes

1 Teaspoon kosher salt

Olive Oil for rubbing

1 to 2 Tablespoons peanut oil for pan frying

Cheddar with hot pepper, 6 to 8 thinly sliced pieces, or enough to cover the steaks surface

Preparing

  1. Coat the steaks with the red pepper flakes and salt. Distribute the red pepper flakes with your hand, rubbing them over the meat so they stick. Allow the steak to come to room temperature and rub with a bit of Olive Oil just before cooking.
  2. Preheat the oven to 400 degrees. Heat the Peanut Oil in a cast iron pan until it's nearly smoking. Then put the steak in the pan
  3. Sear for about 3 minutes on each side, until crispy and brown
  4. Move the steak from the stove top to the oven; using the same pan.For very thick steak(n2 inches an up) broil for 2 to 3 minutes before putting the thinly sliced cheese on top; for thinner steak put the cheese on before you put the steak in the oven; then broil for 3 to 5 minutes total.
  5. When you take the steak out, you want the cheese gently melted and the steak rare to medium-rare. 120 degrees to 130 degrees at the center.
  6. Rest the plate on a warm plate under a loose tent of foil for 5 minutes.
  7. Cut the steak into 1/2 inch long slices.You'll see the cheese adheres nicely and you'll end up with pretty slices. Pink in the middle with the white line of cheese on top. Divide the slices on 4 plates and then pile on a bunch of the Beet Chips, working them up vertically into a graceful stack. Distribute the Kohlrabi salad among the plates.
