The Best Steak Recipes In The Oven

Here at Steak Recipes in The oven I am gonna show you how to make Steak Ah Poivre... Steak Ah Poivre is delicious. This is a steak that calls for potatoes, a simple salad and a lot of red wine... First off, I've never seen hanger steak in the supermarket; you'll probloby have to make a trip to a butcher or order it and have it shipped to you. Ask them to cut out the tenden that runs down the center of the steak or you can do it yourself as well.


2 Pounds Hanger Steak

1 Teaspoon Kosher Salt

Olive Oil for rubbing

4 Tablespoons whole black Peppercorns

Freshly ground black pepper

Pepper Sauce

3 Oxtails

1 Tablespoon peanut oil

2 Shallots, finely chopped (3 tablespoons)

1/2 cup chicken juices

1/2 cup Cognac or good Brandy

1 Cup heavy Cream

1 Tablespoon unsalted butter

Kosher Salt

Preparing Your Steak

Salt the steak generously, rub it with oil and press the ground pepper into both sides.I like to grind my pepper using a Mortar or Pestle,which leaves each berry cracked, but not pulverized. In any case, you want a balance between finely and coursely ground. Cover the meat and set it aside to come to room temperature..

The Sauce

To make the sauce,any inexpensive cut of meat will work.If you're using oxtails,before frying the bones,cut off any of the meat that you can. Cook the scraps and bones in the peanut oil in a good size saute pan over medium high heat.Turn and Scrape often.After 5 minutes,when everything is browned and a bit of the fat has rendered off, remove the bones and any meat, leaving no more than 2 to 3 tablespoons of fat in the pan along with the flavorful bits (reserve the bones). Return the pan to the heat and add the shallots,cooking over medium heat until they're soft, about 5 minutes.

Now add the chicken juices and 1/2 cup of cognac. Skin off any scum that forms.When the liquid has reduced,remove the bones and add the cream. At this point the nearly finished sauce can be set aside until you're ready to use it.

The Oven

Generously salt and pepper your steak before resting it into the warming oven 170 degrees farenheight. Cook in oven for 2 hours then take the steak out and leave it on a warm surface. While the meat rests,finish your sauce by adding a splash of Cognac and the butter,whisking as you reheat it.When it's hot, it's ready. Taste and add salt as needed. Slice the steak into 1 inch thick medalions and place on warm plates.Spoon some sauce over each one.
