Good sushi bars are not that easy to find, even in Japan. You do have to try out many of them before you'll find one that you like. Most sushi bars serve their main type of sushi, of which there are many types and recipes.
The ingredients include vegetables, raw fish, cooked fish and meat, and of course, rice. Every sushi bar uses a different recipe for the rice called "vinegared sushi rice". There are many variations of this rice, which may include vegetables of every type, seafood and sometimes, even tropical fruits.
The only common ingredient is the rice. And that can be brown or white rice. Most recipes have been passed down for generations. Others have been created by the whims of the sushi chef. Garnishes are usually ginger or "Gari", wasabi, and soy sauce.

Makizushi is the most common type of sushi in the United States as well as Japan. It's called the -- The Sushi Roll. Usually it includes vinegar rice and fish, cucumber or avocado, tightly rolled in dried seaweed or "nori", surrounded by a bed of rice. Of course, Americans don't really have the stomach for raw fish, but some have adjusted. However, some, like the Texans, like to eat sushi, but their way, not the original way of Japan.
