This is a salad that has herbs commonly used together in Vietnamese recipes with other ingredients that are Mediterranean. However, they are all fresh. Perhaps this salad should be called “Fresh Confusion Salad”! I am also including a recipe for what is similar to the Indian flatbread known as chapatti because I think that the salad needs to have something to eat with it, This makes for a confusion meal!
Start by taking one cup of whole wheat flour and putting it in a bowl. Measure out half of a teaspoon of salt and stir it in, making sure that it gets well mixed. Take half of a cup of warm water. Mix it with your fingers to combine everything. If it is too moist, add a little extra flour. If it is too dry, add some water. When the dough is combined into one solid mass, knead it for a few minutes until it becomes soft. Then wrap it with plastic and allow it to sit for at least an hour.
After that time, divide the dough into six small balls. Roll each into a round that is about six inches across and that are also of the same thickness. It may be necessary to use a little more flour for this process. Heat a small skillet to high. Add one bread and allow it to cook for half of a minute. Flip and allow to cook for another half of a minute. Flip again. At this time, both sides should have small dark dots and the bread should be getting puffy. Push down on the bread to encourage it to puff. Remove and repeat with the other breads. Wrap in a small towel and put in a basket to wait until the salad is ready.
Start by taking one half of a cup of plain Greek yogurt and adding it to a large bowl. Mix in the zest and juice of one half of a lemon and one fourth of a cup of olive oil. Add a few grinds of nutmeg, a pinch of salt, and some fresh ground black pepper. Take a small amount of fish sauce and add it. Make sure that everything in the bowl is thoroughly mixed at this point!
Next, take one heart of Romaine and chop it into bite-sized pieces. Add this to the bowl. Chop two Roma tomatoes into small pieces and add them. Next, quarter one cucumber and slice it into quarter-inch thick pieces. Add them. Also thinly slice two scallions and add them. Toss the salad. Chop cilantro, basil and mint. Add this to the rest of the salad and mix. Serve the salad with the bread and enjoy.
