Recipe For Bok Choy And Pineapple Salad With Peanut Dressing

This is a salad that uses Asian flavors and ingredients. However, it is incredibly refreshing and flavorful. The dressing is food processed to make it creamy and to make the ingredients combine more fully. Then it is tossed with fruit, vegetables, cilantro and peanuts for a fresh salad with a complex flavor profile. It has a lot of flavor, so it is good to pair it with something that is a little simple, such as cooked rice, tofu or chicken. This will allow you to have a full meal and to be able to pay attention to all the flavors and textures that exist in this salad!

There is a lot of things going on in this salad. Therefore, it might be wise to prepare the vegetables ahead of time and to avoid mixing them until you are ready to eat. The salad dressing could separate, so it is good to either wait to blend it, or to plan on blending it again if it is made several hours earlier. Of course, you will not apply the dressing until you are ready to eat because this is a salad that will not keep.

To prepare the dressing, put one fourth of a cup of smooth natural peanut butter, lime juice from two limes, two tablespoons soy sauce, two teaspoons packed brown sugar, two teaspoons fish sauce, one medium clove garlic and one teaspoon chili-garlic paste in the blender and blend. Add two tablespoons vegetable oil and blend again until everything is fully blended. Keep in the blender in case it separates.

To prepare the salad, take two pounds of baby bok choy. Cut it in half lengthwise and rinse it. Make sure to dry it completely so that the moisture will not make the finished salad soggy. When it is dry, cut the leaves crosswise into one-inch wide ribbons. Cut the stalks crosswise into one-fourth-inch pieces and transfer both into a large bowl.

Take two medium carrots, peel them and halve them lengthwise. Thinly slice them crosswise. Take one half of a medium cucumber and quarter it lengthwise. Thinly slice it crosswise. Coarsely chop one cup of cilantro. Coarsely chop half a cup of roasted and salted peanuts. Thinly slice two medium scallions. Add all of these ingredients.

If the dressing has separated, blend it again. Then add the dressing and serve this salad immediately. If you do not want to eat all of the salad now, you can certainly only mix what you intend to eat and keep everything else separate until later.
