Refreshing Cucumbers

It wouldn’t be summer without the tantalizing smell of fresh cucumbers on the dinner table. This low-calorie vegetable is enjoyed throughout the world and is the fourth most cultivated vegetable, being outranked only by tomatoes, onions and cabbage.

It is well known that the cucumber is low in calories, but there’s a lot more to this summertime favorite than you may know.

Preparing and Eating

Cucumbers need to be well chewed to prevent indigestion since they are harvested before they can ripen. Unless you are eating cucumbers that have been organically grown you should always peel them before eating. If not grown organically they have probably been sprayed with pesticide.

Sliced cucumbers sprinkled with black pepper and covered with vinegar are an old standby. They can also be mixed in a salad with other vegetables. Try these cucumber salads:

Cucumber and Tomato

Toss sliced cucumbers, tomatoes and a red onion in a salad bowl. Try olive oil and red wine vinegar as a dressing. Salt and pepper to taste.

Cucumber and Onion

Mix sliced cucumbers and onions in a bowl, using about a cup and a half of cucumbers for every half cup of onions. Use a favorite dressing or try oil and vinegar with a dash of salt and pepper. Some recipes say mix the dressing in a jar, shake, and then pour over the salad. It can be chilled before serving if you like.

Health Benefits of Cucumbers

Cucumbers are about 96% water, making them one of the most water-rich foods there are. The pulp, or solid part of this vegetable, is rich in highly alkaline minerals. Aside from the small amounts of vitamins A, B, C, and E, it is these minerals that give it healing and therapeutic powers.

Trace elements, especially sulfur, along with potassium, magnesium, phosphorus, calcium, and iron are all found in the cucumber.

As an alkalizer, cucumbers neutralize the excess acidic waste that resides in the body when we eat foods that are from animals.

They also act as a depurant, meaning that they facilitate waste substances being eliminated from the bloodstream. This is accomplished through both the urine and the skin.

Cucumbers can also be classified as a diuretic because they increase the output of urine.

Because of their generous water content and soluble fiber content, they are beneficial in moving waste through the intestine.

Cucumbers as a Skin Beautifier

The sulfur in cucumbers is good for nails and hair. Those with skin conditions such as psoriasis, eczema and dermatitis can relieve these conditions by eating cucumbers.

Placing sliced cucumbers on the face is a refreshing treatment for the skin, and they have long been recommended to take out the puffiness of swollen eyes. Just place a slice over each eye for about 10 minutes.

Don't forget to include this healthy vegetable at mealtime at least a few times a week this summer. It'll help you to keep feeling and looking great!

Cucumbers are terrific! I am constantly amazed at how much my kids will eat at one time. It's nothing for them to polish off a whole cucumber with a meal of curry. They think it's necessary event though I don't consider the curry I make to be spicy! Sometimes I mix the cucumber (or chopped banana) with sour cream and coconut and the kids LOVE it. A very popular vegetable here so I'm glad to read of it's benefits.
