This is a salad that is wonderful to make during the summer. It is refreshing when the weather is hot and tastes fantastic because the ingredients are in season. It is also a recipe that can be eaten as a snack or as part of any meal. The flavors taste complex, but it is simple to prepare.
It is the type of recipe that may seem strange to make because watermelon is often eaten with other fruits and tomatoes often exist with vegetables. However, it is fantastic to put them together. This is because though they may look similar when they are together in a salad, they are radically different. With the acidic vinegar, spicy cayenne and salty feta, they contribute to a salad that has an incredible depth of flavor.
Start by chopping about three cups of seedless watermelon into ½-inch cubes and putting it in a large bowl. Try to save as much of the juice as you can and put it in the bowl, also. To make this happen more easily, it is good to use a sharp knife to remove some of the skin. Then use a butter knife to chop them into the bowl.
Cut about two cups of Roma, cherry or grape tomatoes and put them in with the watermelon. These should also be about ½-inch cubes.
Crumble ½ cup of feta cheese. Thinly slice ½ cup of scallions. Add both of these into the bowl. Add a small amount of salt to the bowl, also.
Next, add ½ cup of olive oil and ½ cup of balsamic vinegar. Then add ½ cup of parsley and a sprinkle of cayenne chili powder.
It works well to use a spatula to gently fold the ingredients together after they are all added so distribute everything throughout the bowl.
This salad can be served immediately. It can also be put in a container so that it can be taken to a picnic or refrigerated to enjoy later.
Variations for the recipe:
Instead of feta, a type of blue cheese or goat cheese can be used.
Instead of scallions, red onion can be used.
Instead of balsamic vinegar, red wine vinegar or sherry vinegar can be used.
Instead of parsley, mint or basil can be used.
This can be served with thick slices of bread to soak up the liquid.
To add another layer of texture, ½ cup of toasted pepitas can be stirred in. Cucumber can be cut into small, thin pieces and stirred in.
