Cleaning Your Commercial And Onboard Kitchens

In order to keep your food truck's kitchen equipment well maintained, you must clean all of the appliances frequently and efficiently. Regular cleaning will work to prevent rust, buildups of grease, food poisoning, and it will also help to increase the life span of all kitchen equipment.

Even if you already believe that you and your staff are doing an adequate job cleaning, read through the following five most commonly missed spots to ensure that your catering truck team has them all covered.

1. The ice machine. When we think of ice machines, we simply think about water. Clean water in, clean water out, right? But often, if left untouched, the ice machine is likely to be contaminated by water by-products that can grow in unsanitary, or unclean, environments. This is troubling since ice is a food product, as it is used in drinks and other foods, and can lead to food poisoning if contaminated ice is consumed.

2. The dumpster area. Contrary to common belief, the places where you put your garbage should not be filthy. Outside, garbage leads to bacteria, rodents, flies and vermin. Especially if your food trailer is located near garbage when it's parked at night or serving meals during the day, the dumpster area must be clean in order to avoid bacteria and foul odors. To clean the dumpster area, first ensure that all of the trash is deposited inside the garbage containers, lids closed. Next, hose the dumpster exteriors down with water and soap so that the there are no traces of garbage scents in the area.

3. In between, behind and underneath the equipment. These areas are not openly visible to you and your food truck's staff, but your health inspector will make sure to check and expose them no matter how hidden these areas are. If you leave these areas unclean, you risk the growth of bacteria and the spread of vermin within your vehicle. Worse than that, though, your food truck will be shut down.

4. The walls. Every time you cook in your vehicle and commercial kitchen, there are food ingredients and grease that splash onto the surrounding walls. These splashes may not be visible at first, but the residue builds up quickly to cause dirty-looking walls and bacteria that attract pests and fruit flies. In order to avoid dirty walls, employees should wipe down the walls directly after cooking so that the food does not dry on the walls.

5. The meat slicer. The meat slicer is a harvesting ground for bacteria. The meat slicer must be cleaned on the top and the bottom, so that every area of the slicer that the meat touched is sanitized.
