Hearty Minestrone Soup with Tortellini

If you’d like to keep it old school and keep your minestrone vegetarian, this is the recipe for you. It begins with a base of Homestyle Vegetable Stock, then incorporates plenty of chopped vegetables, like zucchini, carrots and tomatoes. An untraditional twist is introduced by adding tortellini to the mix, though the soup also features the more classic ingredient choice of cannellini or white kidney beans.
