Your friends and family are expecting the chicken to be rubbery and the after's to be tasteless. But your going to surprise them with a wonderful meal that will have them talking about it for the whole evening and for many days after.
First thing to do is decide on your budget, this will be a major factor as to how your going to feed your family and guests. Once that's out the way and you know exactly how much you want to spend start calling potential wedding caterers to ask for there availabilities and what there prices are. Narrow them down to about three companies.

Next thing to do is to arrange interviews with these companies and request a sample meal if possible.
This way you will be able to meet the staff and owners and see if you like the company and most importantly the food.
When you get that vital interview with them ask the following questions to get a real idea whether they will be up to the job of catering for your family and friends.
Ask them if they could suggest a menu for your wedding congregation giving them the style date and time of your wedding.
Do they specialize in any type of meal
Will the company be catering for any other weddings on your wedding day, if they are how will it impact on your wedding.
How many weddings have this company catered for in the past.

Will there be any extra charges, other than for the food.
Will the company provide everything that is needed for the days catering.
Does the company provide different color's and styles of glasses, linen, plates and accessories.
Who will be handling the wedding day events, you would like to meet the staff previous to the wedding if possible.
It would also be really good if you could get a list of referral's as this would be an ideal way to gauge what kind of work they have done in the past.
If you require a cake make sure you mention this to them so it can be included in the price.
Will the caterers decorate the tables and chairs ready for quests and photography.
Also what kind of times do they need to setup the reception and clean up at the end of the evening?
Make sure you sign a contract and provide the company with the deposit asked for and make the payment in advance if required.
