Pasta really knows no season – but pasta sauce does. In summer, pastas are drizzled with olive oil and sprinkled with shredded parmesan or they’re tossed in a light, tomato sauce. In fall, tagliatelle and pappardelle pastas are slathered in rich mushroom sauces and hearty meat sauces like Bolognese. These kinds of sauces pair perfectly with red wines. Milk chocolate can be paired with a Merlot, a Riesling or a Ruby Port. White chocolate pairs well with ice wines, Lambruscos and Muscats. Dark chocolate’s bitterness is complemented by Zinfandels, Cabernet Sauvignon and Pinot Noir.
