Beers are characterized by their families and types. The Pilsen beer is part of the Lager family. And the wheat beers (Weizenbier) are part of the Ale family. To wipe out these confusions only acceptable after a few more cup, let's talk a little about each family and type of beer. There are three families that differ by the type of yeast they use and their performance during the process:
Lambic beers It's the beer produced by the oldest method of fermentation known. It uses wild yeast, or yeast present in the environment and we have no control over their lines. GUEUZE - a mixture of different Lambics of different ages. KRIEK - in the end of July, are macerated cherries in lambic. The maceration lasts 5 to 6 months to allow the cherries to dissolve completely. FARO - made by adding sugar and caramel in Lambic. FRAMBOISE - obtained by mixing with raspberry lambic, following the same process used to make the Kriek.
Beer Lagers Beers produced by low yeast fermentation. These yeasts have been selected when the old brewers started their production in cold regions such as Bavaria. There, these yeasts had the advantage of having less competition, since the vast majority of wild ferment not adapted to these temperatures. The main characteristic of these strains is their deposition to the bottom at the end of fermentation. Further, work better at lower temperatures, between 41 and 59 F. Thus, its fermentation is slower and produced beer is milder, less fruity and slightly sulfurous. Beers are more relaxed, clear and round.
